Getting to know the Coffee-rubbed steak!

Coffee spice rub is one of the best ways for you to tenderize your meat and enhance the moisture of the meat to create a caramelized crust on the outside. Tannin in coffee helps to deepen the taste of your steak and brings out the savory flavor in your steak.

As coffee spice rub helps build a nice crust outside, the MeatStick X or MiniX would also be your best friend to keep the inner doneness you want to achieve in your coffee-rubbed steak. In any kind of cuts you want your coffee-rubbed steak to be, you would be able to achieve the perfect internal temperature just with the MeatStick X or MiniX. 

Coffee Spice Rub with your own style! 

Coffee rubbed steak would not have any taste of coffee. Instead, its spice is saturated in the meat and creates a slightly earthy and spicy flavor depending on your own spice preference. 

The classic coffee spice rub recipe contains:

  • Dark-roast coffee beans (preferably fresh ground coffee from dark coffee beans and not using instant coffee granules)
  • Kosher salt or sea salt
  • Brown sugar
  • Black pepper.

However, you are always welcome to add other spices too, such asred chili powder, sweet/smoked paprika, onion powder, and garlic powder.

Our Brand Ambassador, Kevin from ManKitchenRecipes, has proved that coffee rub is a foolproof method to cook his beautiful Coffee BBQ Rub Chuck Roast using our the MeatStick X. Before smoking his thick 2 and a half-pound chuck roast for hours into perfection, he did a very generous seasoning using his coffee spice rub and even kindly shared his favorite recipe with us!

Homemade coffee rub ingredients:

  •  2 tablespoons coffee grounds
  • 2 tablespoons brown sugar
  • 1 tablespoon kosher salt
  • 1 tablespoon red chile powder
  • ½ tablespoon smoked paprika 
  • ½ tablespoon black pepper
  • ½ tablespoon onion powder
  • ½ tablespoon garlic powder
  • ½ tablespoon cocoa powder 

How to cook a Coffee BBQ Rub Chuck Roast? 

  1. Mix all the spices to form a perfect coffee rub. 
  2. Rub all the sides of the steak a couple of times with the coffee rub to form a thick layer covering the whole meat's surface. 
  3. Set up your MeatStick App by choosing "Smoke" > "Beef" > and "Chuck (Pulled)" and set the Early Warning at 166°F and set Target at 200°F. 
  4. Put your MeatStick X (fully charged) into the meat. 
  5. Grill until the Early Warning goes off, which should be 166°F. (2 - 3 hours) 
  6. Take out the MeatStick X and wrap your meat in a heavy-duty aluminum foil.
  7. Put in the MeatStick X again and let it smoke until it reaches the internal target temperature of 200 °F. 
  8. Let it rest for an hour and transfer the roast to the cutting board. 

Our Brand Ambassador here was using MeatStick X to cook a thicker chuck roast cut in a smoker, but you can use any cut of meat you want for your own style of cooking. You can always use our MiniX too if you'd prefer.

After seasoning the ribeye, he placed the MeatStick MiniX into the meat and set it up to Stove > Ribeye > 126°F for rare to medium-rare doneness of a ribeye. Searing the coffee-rub meat on a smoking hot cast iron skillet with MiniX resulted in a perfect medium-rare coffee-rubbed ribeye for Chef Evan Martin! A little secret was he added a pinch of salt after his ribeye was done!
