Japanese Katsu Chicken with The MeatStick

So, what is chicken katsu?

Chicken katsu is actually a chicken fillet that rubbed with flour, egg and Panko,or Japanese breadcrumbs. After that, it is deep-fried until it turns golden brown. Panko is an important detail to pay attention to. Simply put, panko refers to Japanese style breadcrumbs that are lighter and crispier.

The other Japanese term we need to know is tonkatsu sauce. It is basically the name of Japanese sauce, they call it ‘so-su’.

Ingredients 

  • 2 Chicken breasts (or chicken thighs if preferred) 
  • 4 slices of white toasts
  • Shredded Lettuce
  • 2 tbsp mayonnaise
  • 2 tbsp Valentina’s Hot Sauce (or preferred hot sauce)
  • ½ cup AP flour
  • 1 tbsp garlic powder
  • 2 tbsp cayenne pepper powder (or red chili powder)
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 ½ cups Panko breadcrumbs 
  •  2 whisked eggs 

Preparation 

  1. Mix flour, cayenne, garlic powder, and 1 tsp. salt in a shallow bowl.
  2. Whisk egg in a medium bowl.
  3. Place panko on a large plate.
  4. Combine mayonnaise and hot sauce in a small bowl. Season with salt and pepper; set aside.
  5. Working one at a time, coat chicken in the flour mix. Shake off any excess.
  6. Finally, dredge the chicken in Panko.
  7. Transfer to a cutting board, large plate, or a small rimmed baking sheet.
  8. Slice up your desired amount of lettuce.
  9. Setup your cook on The MeatStick App.
  10. Once set up, carefully insert The Mini into the thickest part of the chicken breast.
  11. Heat the oil to 375ºF/190ºC in a large skillet. We use vegetable oil in this recipe.
  12. Carefully place both chicken breasts in oil.
  13. The MeatStick App will monitor the cook for you. Our App will tell you when to remove the chicken (internal temp. 165ºF/73ºC)
  14. Once the chicken has reached your desired temp, remove chicken from oil & place on kitchen towels or cooling rack to remove excess oil.
  15. Carefully remove the MeatStick Mini, they will be very hot!

Assembly

Spread spicy mayo on toast then start assembling your Sandwich 

  • Spread spicy mayo on one side of each slice of bread.
  • Top with chicken and shredded lettuce, then close up sandwiches.
