Beef Steak Fajitas Tacos Recipe

Prep time: 1 hour, 10 minutes
Cook time: 15 minutes
Servings: Serves 4

INGREDIENTS

  • 1 teaspoon extra-virgin olive oil 15ml
  • 1 pound of flank steak or skirt steak
  • 1 large yellow onion, peeled and sliced.
  • 2-3 bell peppers of all colors, sliced in length and seeded
  • Salt

STEAK FAJITA MARINADE

  • Juice of 1 lemon
  • 2 tablespoons of extra virgin olive oil
  • 2 cloves garlic, peeled, minced
  • 1/2 teaspoon ground cumin - 5gr
  • 1/2 jalapeño pepper, finely chopped
  • 1/4 cup chopped fresh cilantro, including stems

CHIPOTLE CREAMY SAUCE

  • 50 gr. of Chiles Chipotles en Adobo
  • 2 cloves garlic, peeled, minced
  • 1 teaspoon extra-virgin olive oil - 15ml
  • Salt and pepper to taste
  • 1 tablespoon of mayonnaise/sour cream - 15ml
  • 2-3 tablespoons of milk or liquid cream (depending on consistency) - 30-45ml

GUACAMOLE

  • 1 ripen Hass avocado
  • Half finely chopped onion
  • 1 finely chopped tomato
  • 1/2 jalapeño pepper, finely chopped
  • Salt and pepper to taste
  • Juice of a half lemon
  1. Marinate the steak: Mix all marinade ingredients. Coat the steak with it and let it rest for an hour. For longer resting time place it in the fridge. Before cooking, remove excess marinade and season with salt.
  2. Insert MeatStick and Sear the steak on both sides: Setup Cook on the MeatStick App. Place MeatStick into the thickest part of the steak, and set a large cast-iron pan or griddle over high heat, and let heat up for 1-2 minutes. Add a tablespoon of oil to the pan and let heat up for 1 minute.
    Add the steak, frying on each side until MeatStick indicates desired doneness. The average cut of flank steak should reach medium-rare at 3 minutes per side. Carne asada and skirt steak are quicker. If it starts smoking too much, reduce the heat down to medium-high. The Steak should be browned, not burned. Remove from the pan and let sit, tented with foil, for 5 minutes.
  3. While the meat is resting, proceed to the vegetables. Add a bit more oil to the pan, then add the onions and peppers. Sear 1 minute before stirring, then stir occasionally. Cook for 5-6 minutes total.
  4. Remove MeatStick and slice the meat across the grain into thin slices. Carefully remove MeatStick (it may be very hot) before slicing meat. Slicing the meat across the grain results in pretty thin pieces that provide more flavor and are easier to eat.
  5. Serve immediately with shredded cheese, salsa, shredded roman lettuce, sour cream, guacamole, and warm corn/flour tortillas.

For the Salsa:
Mix all ingredients on a food processor or blender.

For the guacamole:
Mix all ingredients and serve.
