Your Christmas Centerpiece Cooked with the MeatStick: The Prime Rib Roast

Perfecting an entire prime rib roast can be intimidating, especially when you're cooking one for a party of guests at your Christmas dinner. Don't fret – the MeatStick will help you master this rib recipe with confidence and ease. Your guests will be coming back for seconds, thirds and even takeaway leftovers! It's the perfect centerpiece for your holiday dinner.

What You'll Need for this Holiday Meal

  • 2 tablespoons of black pepper
  • 2 tablespoons of salt
  • 2 large minced garlic cloves
  • 2 tablespoons of minced fresh rosemary leaves

The Preparation

SEASON THE PRIME RIB AT LEAST 2 HOURS BEFORE COOKING.

Whisk the tablespoons of pepper, salt, minced garlic, and rosemary together in the same bowl. Rub all sides of the prime rib with olive oil, then generously sprinkle the blend of herbs and spice you just whisked. Press the rub into the meat with your hands. 

If you are prepping the prime rib the night before roasting, place it in a large rimmed pan like a casserole dish and cover it loosely with plastic wrap. Refrigerate the prime rib overnight.

Let your MeatStick charge until full. Your meat thermometer will be a handy assistant – it'll be giving you all the alerts you need, so you won't have to babysit the roast.

Make sure the prime rib has already reached room temperature for 2 hours before putting it into the oven.

TIME TO ROAST!

Preheat your oven to 450 °F for at least 30 minutes while you wait for the prime rib to reach room temperature. Also, remember to set up your MeatStick in the App, so it's ready to go. 

Place the room temperature prime rib bone-side down in a high-sided roasting pan. The bones can be used as a natural roasting rack for the meat. Insert the MeatStick into the thickest part of the roast.

Cook the roast for 15 minutes and then dial the oven temperature down to 325 °F. Continue cooking the roast uncovered, until the MeatStick reads 122 °F for a perfect medium-rare prime rib or 132 °F if you're looking for a medium prime rib. Our MeatStick expert tip is to set an early alert in the MeatStick App for either 122 °F or 132 °F, so you don't even have to watch your meat's temperature.

Expect around 15 minutes of cooking time for each pound of meat. Remove the prime rib roast from the oven once the MeatStick App alerts that the target temperature has been hit. Then, let the prime rib roast sit for 15-20 minutes. Because this is a larger piece of meat cooked at a high temperature, it'll undergo a higher amount of carryover cooking. The roast's temperature will continue to rise as the juices inside settle. This will raise the internal temp to around 135 °F to be served medium-rare or up to around 145 °F to be served with medium doneness. 

If the rib bones are still intact with the completed roast, you can use a carving fork to hold down and stabilize the roast while guiding a knife along the curvature of the rib bones. If you have already removed the bones before cooking and retied them to the roast, just snip off the twine holding the bones and roast together to remove them. 

Slice the roast as your guests prefer and your Christmas centerpiece is served! For a generous serving of your perfect roast, figure on two people per rib.
