Smoked Spatchcock Turkey with A Meat Thermometer (with a Bonus Recipe at the end!)

Cooking a delicious, juicy turkey is a must for a joyful Thanksgiving Day. So, here it is, don't forget to use an accurate wireless meat thermometer, like The MeatStick for example ;).

So, let’s get started.

Instructions for Smoked Spatchcock Turkey Recipe

- Preheat smoker or grill to 350°F/175°C. If you’re using a grill, you will need to set it up for indirect cooking.


- With kitchen shears, remove the spine by cutting along both sides of the backbone starting from the tail bone to the neck until the backbone is completely removed.

- Flip the turkey on to it’s back. Make sure to spread the thighs out so they are laying flat on the cutting board, then press down on the upper breast bone until it cracks. Tuck the wing tips behind the breast so the wing meat cooks evenly.

- Place your turkey on a raised rack or on top of a bed of roughly chopped vegetables, onions and herbs on a baking sheet. Make sure all parts of the turkey are laying as flat and evenly as possible.

- Using a paper towel, wipe away any water or moisture from the skin. This will help the skin get crispy. Next, coat the skin with a light amount of cooking oil or butter. Season the skin with your favorite poultry seasoning or a simple mixture of equal parts kosher salt and black pepper.

- Power on and insert The MeatStick completely into the breast portion of your turkey. Set the recipe to Smoke → Poultry → Whole Turkey, the internal target to 160°F/70°C, and the weight of your bird. Place the baking sheet with the turkey on the grill. Leave it closed for one hour, making sure the grill/smoker temperature doesn’t fluctuate too much on The MeatStick app. After an hour, it’s time to check the skin. If you see cracking or dry spots, spray the bird with cooking spray or baste it with the drippings in the pan. Repeat this every 30 minutes that the turkey remains on the grill. The MeatStick will monitor the internal temperature of the turkey at this point. Once the temperature reaches 160°F/70°C in the thickest part of the breast, the alarm will ring and it’s time to pull off the grill. 

- Rest it for at least 10 minutes before carving.

It's never too early to start planning for the rest of your Thanksgiving menu. From turkey skewers to a tender turkey, the MeatStick is the perfect tool to use this Thanksgiving for cooking any type of meat dish to their perfect doneness. Here's a side dish recipe to spice up your menu this holiday season!

 Aside from stuffed turkeys and mashed potatoes with turkey gravy, another comfort food to compliment your smoked Spatchcock Turkey is the tasty turkey neck. It's perfect for the cold weather and doesn't require preparing and cooking an entire turkey. This might sound intimidating at first, but it's easy to make and helps reduce food waste.

 Unlike preparing raw turkeys or even a whole fresh turkey, you won't be needing the kitchen twine, metal skewer, or flat rack for this recipe. This special side dish isn't reserved only for the experienced cooks and should not take up too much cooking time. The recipe works for both white and dark meat turkeys, whichever your menu prefers. All you need is to prepare:

  • 4 pounds of turkey necks 
  • 3 carrots
  • 1 onion
  • 4 bay leaves 
  • Garlic cloves
  • Salt or kosher salt 
  • Light Olive Oil for frying

Optional: Start by cutting your turkey necks into smaller pieces with a sharp knife.

Dice the single onion into half rings, then clean the three carrots and cut them into larger pieces.

You'll want to start off by browning the turkey necks on a hot skillet. Once the turkey skin turns into a unified brown, place the necks into a cast iron skillet with some fresh herbs, fresh parsley, carrots, and onions. If you decided to cook frozen necks directly, be sure to add in a few cups of water or broth once the skillet starts looking dry.

Sprinkle on black pepper and brush on softened butter over the browned necks before baking for some buttery turkey necks. Optionally, you can mix your melted butter with crushed up garlic cloves and herbs to create a buttery herb mixture. Place the necks into a preheated oven (370F) and bake for about 1.5 hours for some flavorful turkey necks. Make sure the oven thermometer is accurate while you preheat the oven and turn on the oven light. The actual cooking time will depend on your individual oven and its temperature setting. When you pull your moist turkey necks out of your individual oven, the meat should fall off the bone easily and become extremely tender. 

How to Keep Turkey Necks Tender? 

The rule of thumb is to add a cup of hot water to your cast iron skillet (or any oven-safe skillet) before you place it onto the oven racks. Creating a slow boil in the oven will ensure that your turkey necks do not turn rubbery and burnt. The extra liquid will also create a delicious gravy! 

Some More Ways to Cook Turkey Necks

Now that you are in love with this new recipe, we want you to get creative and try cooking the turkey necks differently! Here are a few other ways to prepare turkey necks: 

  • Smoked Turkey Necks: Some butchers have pre-smoked turkey necks.These have an awesome flavor and are the perfect to pair with gravy or stew.
  • Turkey Necks in a Smoked Cooker: Set your smoker to 180F and let the necks smoke for 2-4 hours, or until the neck meats fall off the bone.
  • Turkey Neck Gravy: Turkey neck meat is perfect to use for making gravy – it's dark and flavorful. Make a batch of turkey neck gravy and smother it over anything on the Thanksgiving table!

You can find turkey necks in most, large grocery stores, although not every store carries them.
