Ingredients

  • Pork shoulder (Boston butt)
  • Yellow mustard (for binder)
  • BBQ rub of choice
  • 1 cup apple juice (divided)
  • ½ cup apple cider vinegar
  • Cheddar cheese (cut into small cubes)
  • Flour (for coating)
  • 2 eggs, beaten (egg wash)
  • Panko bread crumbs
  • Chives, for garnish
  • Oil for frying

How to Make Cheesy Pulled Pork Bites

Step 1: Smoke the pork shoulder

  • Score the fat cap, coat with mustard, and season heavily with BBQ rub.
  • Let rest at room temperature for 1 hour.
  • Preheat smoker to 225°F.
  • Insert The MeatStick V and set target temp to 203°F.

Step 2: Spritz during the cook

  • After 2 hours, spritz with a mix of apple juice and apple cider vinegar.
  • Continue spritzing every hour until the pork reaches 165°F internal.

Step 3: Wrap and finish

  • Place pork in a foil pan with some apple juice, cover tightly.
  • Increase smoker temp to 275°F and cook until probe tender at 203°F.
  • Rest in a cooler wrapped in towels for 2 hours.

Step 4: Shred and prep for bites

  • Shred pork well and cool slightly.
  • Form small portions of pulled pork around a cheddar cube, packing tightly into a ball.

Step 5: Bread and fry

  • Coat each ball in flour, dip in egg wash, and roll in panko.
  • Fry at 350°F for ~6 minutes, flipping halfway, until golden brown.

Step 6: Serve and enjoy

  • Garnish with chopped chives.
  • Serve hot and watch them disappear fast.
